Fiya is our expression of various Levantine and related cuisines, cuisines that have blended and evolved over centuries, often showing different personalities as one moves from here to there – Yemen, Morocco, Syria, Turkey, Israel, Palestine, Iraq, Georgia, and many others. What we especially love about the cuisine is that it is healthy while being delicious, veggie and fruit forward with a lesser emphasis upon diary and meat.
